Fundraiser for a Cancer Patient

We wanted to highlight foods that would be fresh and would also be good for a cancer patient to eat. Here is a look at the menu:

Hors d’oeuvre passed in the garden
Salmon Mousse on Cucumber Round
Spinach Feta and Red Pepper Stuffed Crimini Mushroom

Beverages passed in the garden
Sparkling cider
Sparkling water with fresh berry

Reception Buffet
Pellegrino water at each table with small bowl of lemons and limes
Preset: Salad Spring mix with berry tomatoes, chick peas tossed in lime olive oil and golden balsamic vinegar
Assorted Whole Grain Rolls and butter (Gluten Free Options)

Barcelona Beef Kabobs (onions, squash, peppers marinated in a light herbed tomato and lime juice
Southwestern Grilled Chicken Breast
Teriyaki Shrimp Skewer
Fresh Pico De Gallo
Fresh Pineapple Salsa
Black bean, corn and Red Pepper relish (cilantro and lime)
Brown Rice with Green Lentils and Apricots
Sweet Potato Salad
Carrots and Snow Peas sautéed in Sesame Oil
Roasted Brussels sprouts with Pancetta
